One tonkotsu, three moods
Every bowl is our long-simmered Hakata pork broth on thin, straight noodles and kakuni pork belly. The difference is the soul.

白White
The classic — clean, creamy Hakata tonkotsu.

黒Black
Tonkotsu deepened with black-garlic ma-yu.

赤Red
The spicy one — heat built into the broth.
Ramen till 3 AM
Lunch, dinner, and the after-hours shime bowl. Walk in — no reservations, no fuss. Just the counter, the broth, and the lantern still lit.
Thin noodles, long broth, one shop
Hakata ramen is its own thing: thin, straight noodles and a long-simmered pork broth so rich it turns creamy. We top it with kakuni — slow-braised pork belly — and when your noodles run low, call for kaedama and keep going.
商店 just means “the shop.” No frills — a little Hakata provisions-shop that happens to pour Midtown’s late-night ramen.
